power porridge
A healthy porridge or stew
Ingredients
- 4 cups broth
- 2 cups cooked chicken, bite-size
- 2 cups cooked white rice
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup onion, diced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp butter or oil
Instructions
- Melt butter in pot over medium heat.
- Add veggies; cook 4–5 minutes until softened
- Add broth, salt, pepper, spices, etc…
- Bring to a gentle simmer; cook 10–12 minutes until carrots are tender
- Add chicken; simmer 3–5 minutes to heat through
- Stir in cooked rice; simmer 2-3 minutes only
- Taste and adjust salt and pepper
