power porridge

A healthy porridge or stew

Ingredients
  • 4 cups broth
  • 2 cups cooked chicken, bite-size
  • 2 cups cooked white rice
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup onion, diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp butter or oil
Instructions
  • Melt butter in pot over medium heat.
  • Add veggies; cook 4–5 minutes until softened
  • Add broth, salt, pepper, spices, etc…
  • Bring to a gentle simmer; cook 10–12 minutes until carrots are tender
  • Add chicken; simmer 3–5 minutes to heat through
  • Stir in cooked rice; simmer 2-3 minutes only
  • Taste and adjust salt and pepper
