grilled herb chicken thighs
Ingredients
- 2 lbs boneless, skinless chicken thighs (costco)
- 1/2 cup olive oil
- 2 tbsp brown sugar
- 3 tbsp soy sauce
- 1 1/2 tsp lemon zest (pretty fine)
- 1 tbsp lemon juice (optional)
- 1 tbsp fresh parsley leaves (chopped)
- 1 tbsp fresh thyme leaves (chopped)
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp minced garlic
Instructions
- Whisk marinade ingredients in large bowl until combined
- Add 2 lbs boneless, skinless chicken thighs, spoon marinade on top
- Cover and refrigerate for 1-24 hours
- Grill (around 400-500F), let marinade drain off chicken before putting it - on the grill because too much can cause flames
- flip every 2 minutes until chicken gets to 165 F (around 10-12 min)
