grilled herb chicken thighs

Ingredients
  • 2 lbs boneless, skinless chicken thighs (costco)
  • 1/2 cup olive oil
  • 2 tbsp brown sugar
  • 3 tbsp soy sauce
  • 1 1/2 tsp lemon zest (pretty fine)
  • 1 tbsp lemon juice (optional)
  • 1 tbsp fresh parsley leaves (chopped)
  • 1 tbsp fresh thyme leaves (chopped)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp minced garlic
Instructions
  • Whisk marinade ingredients in large bowl until combined
  • Add 2 lbs boneless, skinless chicken thighs, spoon marinade on top
  • Cover and refrigerate for 1-24 hours
  • Grill (around 400-500F), let marinade drain off chicken before putting it - on the grill because too much can cause flames
  • flip every 2 minutes until chicken gets to 165 F (around 10-12 min)
